Collection: La Chaume des Lies

Margaux and Lothar met in 2018 while both working with Pierre Fenals at Maison en Belles Lies. Margaux had joined Pierre two years earlier, in 2016, where she learned the foundations of biodynamic farming and low-intervention winemaking.

After completing his studies in oenology, Lothar gained experience through internships with Bruno Schueller in Alsace and Didier Barral in Languedoc. He also grew up learning vegetable and crop cultivation on his parents’ organic farm, which deeply shaped his agricultural sensibility.

When they decided to embark on their own project, they began by renting 2.5 hectares of vineyards spread across Saint-Aubin, Auxey-Duresses, Bouzeron, and the Hautes-Côtes de Beaune, along with an additional 2 hectares in Beaujolais. After a long search for the right space, they eventually found their cellar in Baubigny, a small village just south of Saint-Romain.

They farm all their parcels themselves, without pesticides, and in harmony with the lunar calendar. Although they have many plans for the future, the energetic young couple certainly isn’t idle: alongside tending their own vineyards, they continue to work with Pierre at Maison en Belles Lies.

In the cellar, their approach is guided by precision and careful observation, allowing each wine to evolve naturally and express its terroir and vintage with minimal intervention. They work primarily with Aligoté, Chardonnay, and Pinot Noir, and released their first vintage in 2021.
