Collection: Maison des Saules

Maison des Saules is a young, highly promising Jura estate founded by Anne-Cécile Daubigney and Marc Lacroix, a duo bound by their shared passion for wine, terroir, and their native region. Both trained as sommeliers at the Lycée Hôtelier in Poligny and gathered wide-ranging experience before embarking on their own project: Anne-Cécile worked in Paris and with François Rousset-Martin in Jura, while Marc honed his skills internationally, in London, Valence, Ecuador, and with Thomas Pico in Chablis. Marc launched the estate in 2022, and Anne-Cécile joined full-time in 2024, marking the true beginning of Maison des Saules.

The estate now cultivates around five hectares across Villeneuve-sous-Pymont, Savagna, and L’Étoile, in gently sloping, amphitheatre-like vineyards on grey marl soils. The vineyards are in a gradual renewal phase: some are already producing fruit, while others are just beginning, complemented by initiatives to enhance biodiversity, including a new orchard. Farming is organic and biodynamic, grounded in the belief that wine is born first and foremost in the vineyard.

Winemaking is natural and low-intervention, carried out in cellars at Perrigny and Chille. Whites ferment spontaneously and are then aged in used oak barrels; Savagnin, in particular, is often aged for 24–36 months to develop depth, complexity, and finesse. The estate’s backbone lies in long-aged Chardonnay and Savagnin. All wines are bottled unfined and unfiltered, with minimal sulfur, producing wines that are honest, lively, and patient, the hallmark of the finest Jura whites.
