This wine is made from 100% Savagnin grapes grown on the Lias-era marl soils of the “Au Poirier Doré” parcel near Villeneuve-sous-Pymont. The grapes are hand-harvested and directly pressed, with the must fermenting spontaneously using native yeasts. It is then aged on lees for approximately two years in old oak barrels, developing depth, complex aromas, and a long, evolving finish. No sulfur is added during vinification, allowing the wine to remain lively, pure, and true to its terroir. While its fresh, mineral-driven character is approachable in youth, further aging reveals the wine’s remarkable complexity and layered development.

Maison des Saules is a young, highly promising Jura estate founded by Anne-Cécile Daubigney and Marc Lacroix, a duo bound by their shared passion for wine, terroir, and their native region. Both trained as sommeliers at the Lycée Hôtelier in Poligny and gathered wide-ranging experience before embarking on their own project: Anne-Cécile worked in Paris and with François Rousset-Martin in Jura, while Marc honed his skills internationally, in London, Valence, Ecuador, and with Thomas Pico in Chablis.
