After spending several years traveling the world as a graphic designer (first in South America, then Spain, and finally Germany) Fabien eventually returned home to France and gave in to what had long been his true passion: winemaking.

From 2018 onward, he trained and worked at several leading estates in the Loire Valley. He began with Jean-Pierre Chevallier at Château de Villeneuve in Souzay, continued with Matthieu Vallée at Château Yvonne, and later joined Aymeric Hillaire at Domaine Mélaric. These formative experiences laid the foundation for his own project.

In 2020, Fabien acquired his first hectare of Chenin Blanc from Domaine des Cabors in Forges, south of Saumur, vineyards that had been farmed organically since 2012. Soon after, he added another hectare planted with Chenin, Grolleau, and Cabernet Franc, which had previously been cultivated conventionally. Without hesitation, he began converting these vines to organic farming, unable to imagine working any other way.

He now tends his two hectares largely on his own, assisted by a few friends during spring and the autumn harvest. In the vineyard, he relies only on a small tractor; everything else is done by hand, reflecting the importance he places on craftsmanship and physical connection to the vines.

At the beginning of his journey, Fabien received guidance from Côme Isambert and vinified his first wines in a cave in Saumur before moving into his own cellar in 2022. There, he works with an old wooden basket press and typically ages his wines in barrel. He racks the wines just twice: once after fermentation and once before bottling.

No additives are used, and all wines are bottled unfiltered and unfined.

The results are beautifully balanced, precise wines. Though the domaine is still in its early stages, the promise is unmistakable, a bright future clearly lies ahead.
