100% Grolleau, harvested from the limestone-blue flint soil typical of southern Saumur, from vines with low production of grapes. The wine is made from 75% whole bunches of grapes, which Fabien soaked in the juice of 2020 Grolleau, which makes up the remaining 25%. After a week, it is pressed and the juice is aged in a mixture of multi-fill oak and steel tanks for 24 months. The wine was bottled in November 2023 without filtration, fining or adding sulfur. Only 1,175 bottles were made.

After spending several years traveling the world as a graphic designer (first in South America, then Spain, and finally Germany) Fabien eventually returned home to France and gave in to what had long been his true passion: winemaking.
