On the wild slopes of Etna, where vines climb centuries-old terraces and the energy of the volcano fills the air, Fabio Signorelli crafts wines as vibrant and alive as the mountain itself.
Fabio is more than a winemaker, he is a keeper of Etna, a passionate interpreter of its unique terroir. His journey began long before he set foot on the Sicilian volcano. After studying viticulture and oenology, he gained experience across Italy, from Tuscany to Umbria, before discovering the place that would transform him: Etna.
In 2010, as a recent graduate, Fabio first stood on the volcano’s slopes. He immediately understood that this was more than a wine region. It was an “island within an island,” where microclimates shift dramatically from coastal warmth to mountain coolness, creating a landscape unlike anywhere else. Here, viticulture is not just a profession, but a constant dialogue with nature, both a challenge and a collaboration.
Fabio spent years working in Etna’s acclaimed wineries, learning to understand the mountain’s extraordinary soils, climates, and native varieties. In Nerello Mascalese, he found a grape perfectly attuned to the place: elegant, refined, and expressive.
In 2018, he realized his dream of founding his own winery. He purchased an old estate in the Contrada Bardazzi area, above Linguaglossa, where vineyards, olive trees, and orchards coexist in natural harmony.
His approach is rooted in tradition, with a deep respect for the land. Fabio farms biodynamically and practices minimal intervention, trusting that the vine can reveal its character if left largely alone. Each vine is tended individually, his work guided by patience and humility.
In the cellar, handwork remains central. Gentle maceration during fermentation preserves the purity of the fruit and the essence of the terroir. The resulting wines are richly textured and full of character, yet delicate and nuanced, faithfully reflecting the spirit of Etna.
The diversity of his vineyards, differing in location, exposure, soil type, and vine age, ensures that each wine tells a unique story, while collectively capturing the volcanic soul of the mountain.
