In the process of making natural wine, the producer's activity is therefore limited to a few well-chosen, essential steps. His artistic individuality unfolds at a higher level, in meticulous collaboration with nature.

Living matter

An important qualitative feature of natural wine is that it is a living substance. Thus, it presents a much greater completeness of the processes prevailing in nature. It therefore contains, for example, broom, volatile acid or reduction, which are also the means of expression of the producer, their extent being the result of the joint work of nature and the producer. In addition to this statement, it is very important to state that natural wine cannot be defective! Natural wine - since it is a living substance - has different expectations than technological wine. They can react more sensitively to transport and temperature, but at the same time, under the right conditions, they can be orders of magnitude more expressive, richer in detail and even have a longer maturation potential.

Natural wine is an ideal

Natural wine is an ideal that is very difficult to achieve. In certain situations, the producer must decide to relax point 3 of the definition for stability and add a little sulfur, but only before bottling. In our trade, we mostly work with batches in which the total sulfur content is below 30mg/L ... and finally: natural wine is much more than just wine: let's pay attention to our body's reaction when tasting it with a technological wine!
