This wine is crafted from Nerello Mascalese, Sangiovese, Grenache, Grecanico, and other local white varieties. After hand-harvesting and pressing, the must undergoes a 24–36 hour maceration in open vats, during which spontaneous alcoholic fermentation begins.
The wine is then gently pressed by hand with a basket press, and fermentation continues in concrete tanks. Finally, it is aged in small fiberglass tanks, allowing the wine to mature gracefully and develop its final character, resulting in a structured, expressive, and terroir-driven wine.
