All members of the "Origin" series are made from varietal grapes in the purest Alsatian tradition, here 100% Pinot Gris. After the hand harvest, the grapes kept in whole clusters are soaked for 7-10 days in covered containers in the open building of the winery, then the mock is placed in large Alsatian barrels (foudre) for 11 months of maturation. Tea-like tannins, saltiness, and in the sip, dried herbs and ripe peaches meet. It is worth decanting before consumption so that the Dreyer magic can fully manifest itself.
