The grapes undergo a few days of whole-cluster maceration, followed by gentle pressing and ageing in large, older barrels. Bottled unfined, unfiltered, and without added sulfur, preserving its freshness and purity.

Daniel, a lifelong wine enthusiast, is entirely self-taught as a winemaker. Born in the suburbs of Lyon and raised in Saint-Étienne, he originally trained as a locksmith. Life took him down many different paths before he ultimately anchored himself in his true passion: wine.
