100% Pinot Noir, fermented whole-cluster in large open vats using partial carbonic maceration. Before pressing, the cap is gently pressed daily to keep it from drying out and to help the wine develop color. Fermentation is completed in old, large barrels over 12 months. The wine is bottled unfiltered and unfined, with just 5 mg/L of natural sulfur from volcanic mines.

Pierre Clair’s story begins in the 1960s, when he first planted vines on his parents’ land near the village of Corpeau in the Côte d’Or, producing just enough for experiments and personal consumption. He and his wife, Jennifer, eventually took over his grandfather’s estate in 2006, working evenings and weekends alongside their jobs at other local wineries.
