Chenin Blanc from a certified biodynamic vineyard. This wine is made from three plots of Rablay, where the vines are between 15 and 90 years old. The soil is red sand, quartz and gravel, with underlying shale.
The pressed juice is poured into steel tanks before fermentation begins, where alcoholic and lactic fermentation takes place naturally, without yeast inoculation or temperature control, thanks to Thomas' cellar, which is located under the house and provides a constant 14 degrees for the wines. The wine rests without sulfur, on fine lees, in steel tanks until the summer. After 12 months, Thomas decants the wine, lightly filters it, and then bottles it in September, before the harvest. It is bottled without fining, with only minimal sulfur added (10 mg / l).

Thomas's more than unusual life path – anthropological and film studies, a brief career as a film director – led him to Anjou, where he first tried his hand at the role of cellar master at Château Yvonne and became acquainted with natural winemaking.

In 2011, he bought 2 hectares of vineyards in Rablay-sur-Layon, where he saw some promising land next door to Richard Leroy. The soil was a mixture of red sand, gravel and deep clay, which Thomas could not have dreamed of better for the realization of his plans.
