Chenin Blanc harvested from young vines from a certified biodynamic vineyard. The area is located on the edge of Rablay, the last vineyard in the village, from which Esprit Libre also comes. The soil here is much more shale than in the Esprit Libre area, as the plot is located on the fault line of the mountain.
The pressed juice is filled into steel tanks before fermentation begins, where alcoholic and lactic fermentation takes place naturally, without yeast inoculation or temperature control, thanks to. It is then aged in used wood for 10 months before being bottled without filtration, clarification or addition of sulfur.

Thomas's more than unusual life path – anthropological and film studies, a brief career as a film director – led him to Anjou, where he first tried his hand at the role of cellar master at Château Yvonne and became acquainted with natural winemaking.
In 2011, he bought 2 hectares of vineyards in Rablay-sur-Layon, where he saw some promising land next door to Richard Leroy. The soil was a mixture of red sand, gravel and deep clay, which Thomas could not have dreamed of better for the realization of his plans.
