Grolleau, planted in 1960, in the Case Neuve vineyard, where Thomas owns a plot and where he works with a very low yield (25hl/ha). The 0.33ha site, located in a riverbed between the British and Parisian continental plates, presents a wide range of soils: clay, blue slate, quartz.
Whole bunches are harvested, half of which are placed in vats with the stalks and fermented on the skins for 3 days, the other half are pressed immediately. No destemming, no crushing. The alcoholic and malolactic fermentation is completed in steel tanks, followed by 12 months of aging. Without filtration and fining, it is bottled in September with the addition of approx. 10 mg / l of sulfur.

Thomas's more than unusual life path – anthropological and film studies, a brief career as a film director – led him to Anjou, where he first tried his hand at the role of cellar master at Château Yvonne and became acquainted with natural winemaking.

In 2011, he bought 2 hectares of vineyards in Rablay-sur-Layon, where he saw some promising land next door to Richard Leroy. The soil was a mixture of red sand, gravel and deep clay, which Thomas could not have dreamed of better for the realization of his plans.
