Viognier from northern Ardèche, grown on sandy, granitic soils about 15 minutes from Pauline’s cellar. The grapes were harvested on September 21. The cooler 2023 vintage is reflected in the wine’s lively, saline character.
After harvest, the grapes were cooled and very slowly whole-bunch pressed over several days. The juice was then transferred by gravity into stainless steel tanks, where it rested on fine lees for seven months. The wine was bottled manually by gravity on April 18.
At just 9.5% alcohol, it remains light and delicate, yet still expressive, showing vibrant tropical fruit notes, a touch of spice, and a refreshing, slightly bitter finish. Unfiltered and unfined.
