Viognier & Chardonnay – Equal Blend, Multidimensional Maceration.
The grapes come from organically farmed vineyards in the Gard, near Sardan, planted on limestone and clay soils. This wine is crafted using an infusion-style method: whole-bunch Viognier is soaked in directly pressed Chardonnay juice for 25 days. Afterward, the wine is slowly pressed and aged in stainless steel tanks for nine months, before being bottled on April 25, 2024. The result is a sophisticated wine with a golden-amber hue, marked by restrained, chalky, and deeply integrated tannins. Aromas of citrus oils, ripe peach, salty apricot, and sweet almond mingle harmoniously with herbal notes and a delicate tea-like nuance. A stunning, layered wine, offering elegance, complexity, and subtle detail in every sip.

Petite Nature
La Fée Paulette, as we meet her on social media and at wine events in France, is none other than Pauline Maziou, who lives and works in Quintenas, northern Ardèche.
Pauline's parents also farmed in the region, so working with the land and animals is not far from her. After a tortuous and adventurous few years, she starts working in a wine bar in Anonnay, where she meets several local winemakers, who influence her to study first with Jean Delobre (L Ferme des 7 Lunes) and then with our beloved Daniel Sage.
