A blend of 50% Blaufrankisch and 50% Syrah.
Whole clusters were direct-pressed, and at a carefully chosen point in fermentation, the wine is bottled by hand. The bottles are then stored in the garage, where they rest until spring. During the first warm days of spring, when nights are still frosty, the Koppitsches move the bottles to the backyard. After a few days, the bottles have cooled enough and are ready for the final step – disgorgement. Each bottle is opened by hand, refilled, and recorked.
