The grapes are pressed on an old, large wooden press, and fermentation begins spontaneously with wild yeasts in a fiberglass tank. After fermentation, the must is transferred by gravity into second-fill barrels and left to develop naturally for 12 months without intervention.
The result is a truly deep, rich, and layered wine, with notes of stone fruits, citrus, and beeswax.

After spending ten years working in Asia, Olivier, still disarmingly young, decided to turn his attention to wine. He completed his viticulture studies at the University of Auckland, followed by several formative years at Felton Road, one of New Zealand’s most renowned estates.
In 2017, he returned to France with his wife and young child, where he was mentored by Marc Angeli of Ferme de la Sansonnière, a key figure in the Loire Valley’s natural wine movement.
