“Velue” is simply the old name for Velm, the village from which Johannes harvests the grapes for this wine. The blend is Riesling-led, with Grüner Veltliner providing structure and Muskateller contributing delicate, aromatic highlights.
The Riesling spends one day on the skins, adding subtle texture and phenolic complexity. The Grüner Veltliner is direct-pressed to preserve purity and freshness, while the Muskateller sees just five hours on skins and stems, enhancing aromatics without overpowering the blend.
Fermentation is entirely spontaneous in steel tanks at 21–24°C, preserving the wine’s purity and sense of terroir. It then ages for a full year on fine lees, occasionally stirred by Johannes, adding depth, complexity, and a silky mouthfeel.
The wine is bottled unfined, unfiltered, with just a touch of added sulphur, resulting in a harmonious, layered expression of Velm’s vineyards.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
