50% Chardonnay, 25% Riesling and 25% Scheurebe.
The Chardonnay, after hand harvesting, is placed in 500 liter amphorae, where it ferments in whole bunches with carbonic maceration, then after pressing it is transferred in steel tanks and blended with the Scheurebe and the Riesling. The Riesling - including several vintages, made in solera system in old, oak barrels - which most determines the character of the wine. It was bottled unfiltered, unfined and without added sulfur.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
