Rösler, Syrah, St.Laurent
The three grape varieties are vinified and matured separately, then brought together at bottling. The Rösler is split between whole-bunch fermentation and destemming with direct pressing. Syrah is carefully destemmed and given a gentle two-day maceration before pressing. St. Laurent ferments and ages in amphora for 12 months, with multiple vintages subsequently matured in stainless steel using a solera system.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
