The Numen series represents wines made completely without intervention. Johannes’ philosophy is to let each wine “emerge” naturally, giving it time to fully express the potential of old vines.
For this wine, the grapes were fermented as whole clusters in amphorae for several days, then gently pressed by handand aged on the skins for 16 months. It was bottled without added sulfur, filtration, or fining, resulting in a wine of raw purity, texture, and expressive terroir.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
