Hand-picked from one of Austria’s oldest St. Laurent plantings, nearly 100 years old, in the Steinthal vineyard, this wine captures the elegance of aged vines. Harvested in mid-September, the whole clusters are placed in 500 L amphorae, allowing the native yeasts on and inside the berries to initiate fermentation.
After seven months, the grapes are pressed and the juice is blended with additional St. Laurent base wine, prompting a second fermentation. The result is an incredibly refined wine with floral aromas of rose petals and violets, balanced by light pomegranate and blueberry flavors and refreshing acidity. Despite its deep, vivid color, the palate is elegant, lively, and precise.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
