Sauvignon Blanc harvested from the loess–clay soils of Steinthal forms the base of this uniquely refined and distinctive wine. Every wine in the Numen series is made with minimal intervention and only released from the cellar after extended ageing, allowing time and nature together to reveal as much as possible of the grapes and the terroir. Numen Fumé Blanc was fermented as whole clusters in amphorae for a few days, then gently pressed, aged on its lees for over a year, and bottled unfiltered without added sulfur.

Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
