The southwest-facing Madonna vineyard, with abundant sunlight, steep slopes, and an incredible amount of slate, is planted with vines around 35 years old. The grapes are hand-harvested and whole clusters are fermented in 350-liter stainless steel tanks with natural wild yeasts. The tanks are cooled by ambient air, and fermentation lasts about 8 months. The wine is aged for 11 months, then bottled without fining, filtration, or added sulfur.
