The grapes from the Faye d'Anjou vineyard, planted in 1968, are 100% Chenin Blanc.
The 0.6 ha area is in a prime location, with southwest exposure at the highest point of the mountain, so the frequent winds help the vines resist disease and maintain their acidity. There is only 20-30 cm of topsoil here, which forces the plant’s roots to break down to the shale bedrock, concentrating exceptional flavors in the wine. Fermentation and maturation take place in 500l used barrels, then Thomas transfers the wine to steel tanks for a few months before bottling. He adds just a few milligrams of sulfur, during the fermentation process that breaks down with the lees mostly by the bottling.

Thomas's more than unusual life path – anthropological and film studies, a brief career as a film director – led him to Anjou, where he first tried his hand at the role of cellar master at Château Yvonne and became acquainted with natural winemaking.
In 2011, he bought 2 hectares of vineyards in Rablay-sur-Layon, where he saw some promising land next door to Richard Leroy. The soil was a mixture of red sand, gravel and deep clay, which Thomas could not have dreamed of better for the realization of his plans.
