Saint-Savin is an old family vineyard, planted between 1973 and 1986 beneath the rocks of the Croix du Dan, covering 1.60 hectares. Originally planted with Savagnin and Chardonnay, it was complemented in 2010 by an additional 40 ares of Chardonnay.
The soil is extremely stony limestone rubble of Bathonian age, resting on gray and blue marl, with a western exposure that captures the final sunlight of the day. The grapes are hand-harvested and directly pressed, with fermentation taking place partly in stainless steel tanks and partly in wooden barrels. The wine is then aged in barrels with ouillage (topping up) to preserve freshness and fine structure, resulting in a wine that reflects the precision, minerality, and elegance of its terroir.
