100% Mourvèdre. After the success of their 2022 noble rot experiment, the Soulier brothers decided to repeat the approach in subsequent vintages. The idea is to wait for the November rains, which help dilute the potential alcohol while encouraging the development of noble rot, adding complexity to the wine.
The result is something of a late-harvest style, yet the wine remains remarkably light, finishing at just 12.5% alcohol. The grapes underwent 20 days of whole-bunch maceration, producing a wine that is fresh, airy, and layered with complexity. It was then aged for 9 months in barrel without racking. Bottled unfined and unfiltered.

Charles and Guillaume Soulier took over their father's estate in Saint Hilaire d'Ozilhan, at the junction of the Rhône and Gard regions, in 2014 and produced their first vintage in 2015. By selecting the best sites, they work on a total of ten hectares, mainly with red varieties such as Grenache and Syrah.
