A vibrant ruby Carignan and another delightfully light vintage. The fruit, from 50-year-old vines planted on limestone and clay, undergoes ten days of carbonic maceration before being slowly pressed (using a large, old hand-held wooden press purchased from Yvon Métras) into steel tanks where it is aged for 7 months.
This wine perfectly reflects the youthful vigor that Gérald and Jocelyne believe in. Freshly pressed black and red wild cherries, with fennel-herb notes and a slight balsamic tang, and a pleasant minerality from the limestone on the finish. It is worth slightly cooling to show its best form.

Gérald Oustric is a living legend of French winemaking. Many of today’s natural wine pioneers, including Andrea Calek, Jérôme Jouret, Sylvain Bock, and Anders Frederik Steen, openly acknowledge the debt they owe him for giving them the freedom to experiment and spread their wings.
