100% Viognier from approximately 40-year-old vines planted on limestone and clay soils. The grapes are whole-cluster pressed directly into stainless steel, where fermentation takes place on the lees over six months before bottling, with no additions. The wine shows a fresh, invigorating acidity balanced by expressive aromatics of white peach and laurel, with a subtly spicy, saline character.
The finish is long and savoury, combining spice, freshness, and a fine mineral tension.

Gérald Oustric is a living legend of French winemaking. Many of today’s natural wine pioneers, including Andrea Calek, Jérôme Jouret, Sylvain Bock, and Anders Frederik Steen, openly acknowledge the debt they owe him for giving them the freedom to experiment and spread their wings.
