100% Syrah from clay-limestone soil, harvested from vines over 50 years old in mid-September 2021. Fermented as whole bunches in a steel tank using a 10-day carbonic maceration process. Slow and careful pressing in two stages: with an old wooden press and a pneumatic press. It fermented for 22 months at 8-12°C, then was bottled in May 2022 without filtration, fining, or the addition of sulfur.

The Mazel
Gérald Oustric is a living legend of French winemaking. Many of today’s natural wine pioneers, including Andrea Calek, Jérôme Jouret, Sylvain Bock, and Anders Frederik Steen, openly acknowledge the debt they owe him for giving them the freedom to experiment and spread their wings.
