In Rheinhessen, Riesling plays a key role, and according to Jason, it’s one of the most exciting varieties, showcasing the local terroir beautifully. The fruit was pressed right after harvest to preserve its natural freshness, then the juice was transferred to large barrels, where it aged on fine lees for 9 months. It is bottled without filtration, fining, or the addition of sulfur.
