This cuvée is made from grapes selected from the best-exposed part of the Pinot Noir plantation in the Rókaluki vineyard, planted in 1999. István harvested the grapes in the last days of August during this exceptionally hot and dry year. Mostly whole clusters, along with a smaller portion of directly pressed juice (70–30% ratio), fermented for 10 days in a 2,000-liter wooden vat without punching down, being gently drenched twice daily. After gentle pressing, the wine is transferred by gravity into a 2,500-liter second-fill barrel to age on its lees for 13 months. It is bottled unfiltered, unfined, without racking, and with no added sulfur.
