A blend of 65% Cabernet Franc and 35% Syrah, sourced from Johannes' estate with clay-rich soil. Straightforward winemaking, as with all wines, with spontaneous fermentation and minimal intervention. Fermentation takes place in whole berries for extra easy extraction. Syrah spends 3-4 days on the skins, Cabernet Franc about twice that. Aged in old wooden barrels. Unfiltered, unfined and with no added sulphur.

Johannes Zillinger
Johannes Zillinger learned the craft of organic winemaking from his father at an early age, developing a philosophy that sees the vineyard not just as a plot of land, but as a living habitat. His father, Hans, who turned to organic viticulture in 1983, two years before the glycol scandal, became one of Austria’s early pioneers in the field.
