100% Sauvignon Blanc from the Saint-Bris vineyard, grown on clay-limestone soils from vines around 20 years old.
Directly pressed as whole clusters, then aged for 12 months in multi-use Burgundy barrels. Bottled unfined, unfiltered, and without added sulfur.

Born in Troyes, Nicolas first encountered the science of winemaking at a school in Belleville (Beaujolais) in 1989. After completing his studies, he completed an internship in Washington State, where he learned how to produce wine on an industrial scale.
