“Les Vieilles” means “the old ones,” referring to Nicolas’s two oldest vineyards, 80 and 93 years old, located in the Irancy appellation. After hand harvesting, the grapes are fermented as whole clusters using carbonic maceration. After pressing, the young wines from each parcel are aged separately in casks, then blended later. Following barrel aging, they are bottled unfined, unfiltered, and without added sulfur.

Born in Troyes, Nicolas first encountered the science of winemaking at a school in Belleville (Beaujolais) in 1989. After completing his studies, he completed an internship in Washington State, where he learned how to produce wine on an industrial scale.
