100% Aligoté. After destemming, the grapes are pressed and fermented in a fiberglass tank, remaining on the skins for two weeks. The majority of the wine (about 2/3) spends 8 months in a fiberglass tank, while a smaller portion is aged in multi-use Burgundy barrels. It is bottled unfined, unfiltered, and without added sulfur.

Born in Troyes, Nicolas first encountered the science of winemaking at a school in Belleville (Beaujolais) in 1989. After completing his studies, he completed an internship in Washington State, where he learned how to produce wine on an industrial scale.
