The grapes were harvested in early September, including some clusters that had turned a deep, magical purple and botrytized and the juice was gently pressed. When fermentation began, about 30% Grenache was added to the vessel and then carefully removed by hand with a net.
The wine was aged for one year in a new Burgundy barrel before bottling. The result is a lush, deeply fruity, and silky red, with enough structure and depth to pair beautifully with hearty, grilled, or meaty dishes.
