100% Gamay from the Chiroubles appellation, sourced from a site at approximately 450 metres above sea level. The vineyards are farmed with minimal intervention, and the grapes are hand-harvested. Vinification is similarly hands-off: whole-cluster, spontaneous fermentation with no added sulphur, followed by bottling unfined and unfiltered. The wine shows a lively, fresh, and pure character, with aromas of cherry, pomegranate, and violet. The granite soils of the old vines contribute a distinct minerality and structure, lending depth and complexity to the wine.

Romuald Valot
Born in Burgundy, Romuald Valot has spent the past decade carving out his own path in the remote hills of Beaujolais. Raised in a winemaking family in the Hautes-Côtes de Nuits, he developed a deep passion for wine from an early age. His career began with five years on an estate in Bandol before returning to Burgundy to work in the vineyards of Chambolle-Musigny, including plots owned by Domaine Faiveley.
