“Les Prévolles” (100% Pinot Noir) comes from approximately 50-year-old vineyards, where the vines gather their unmistakable aromas from the calcareous-sedimentary soil. After manual harvesting, the grapes are macerated in whole bunches for approximately three weeks. After fermentation, the wine is aged in barrique barrels for 12 months before being bottled without filtration, fining or adding sulphur.

Although Renaud Boyer, a native of Meursault, originally intended to become an engineer, he was drawn back early on to the remarkable terroirs of the Côte de Beaune, ultimately following in his grandfather’s footsteps.
He took over 3 hectares of vines (many over 80 years old) from his uncle, Thierry Guyot, a pioneer of organic and biodynamic farming in Burgundy since 1986.
