If you know us, you’ve probably heard us talk about reduction and energy at one of our tastings. But what exactly is reduction?

In short, it’s a stylistic character that can develop in a wine made with zero/zero winemaking and long ageing on lively, active lees. Flint, struck match and smoke are some of the most common aromatic expressions in white wines, beautifully complementing the fruit and mineral notes. These wines seem to be bursting with energy, and when tasting them, it’s worth paying attention to the subtle signals our bodies are giving us.

We’ve brought together three beautiful examples to explore reduction and energy, through the extraordinary and deeply inspiring wines of Ewald Tscheppe (Styria), Rudolf Trossen (Mosel) and Timi Éless (Tokaj).
