100% Grenache Noir - oxidative white style
This cuvée represents the estate’s oxidative interpretation of Grenache Noir. The grapes were not harvested at full ripeness, and the wine was produced from the final pressing fraction, giving it a distinctive structure and bitterness. Fermentation and élevage extended over four years, during which the wine developed under oxidative conditions. The natural bitterness of the raw material gradually evolved through this long maturation, resulting in a remarkably saline wine with aromas of almond, white pepper, and dried fruits.
The wine spent three years aging in barrel under voile (a natural yeast film), followed by 12 months in bottle. Even the label reflects the philosophy of the wine: its color was created by oxidizing a copper plate, producing the distinctive verdigris (“vert-de-gris”) patina.
Bottled unfined and unfiltered.

Charles and Guillaume Soulier took over their father's estate in Saint Hilaire d'Ozilhan, at the junction of the Rhône and Gard regions, in 2014 and produced their first vintage in 2015. By selecting the best sites, they work on a total of ten hectares, mainly with red varieties such as Grenache and Syrah.
