100% Chenin Blanc – Late Harvest.
Few producers venture into the realm of long-aged, sweet wines without added sulfur, a path requiring infinite patience and total surrender to nature. Following the tradition of the Coteaux du Layon in the Loire, Jérôme hand-harvested this Chenin in November 2015, picking grapes partly affected by botrytis, alongside normal and slightly overripe bunches.
After a gentle pressing, the wine aged for an astonishing 108 months in barrels, with constant care and monitoring to ensure stability before bottling. The result is a miraculous, long-lived sweet wine, where the ethereal balance of residual sugar and lively acidity creates an unforgettable, celebratory experience. Each sip is layered, vibrant, and timeless, leaving a lasting impression on the palate.

Jérôme Saurigny

Jérôme is part of a community that took shape organically in the early 2000s in the Loire Valley. A group of young, nature-driven, often first-generation winemakers devoted to natural wine. They work long days in the vineyards and cellars, living simply and supporting one another when needed. Ideas are shared freely, yet each ultimately follows his own independent path toward authentic, low-intervention winemaking.
