He decided to turn the remaining grapes into a cuvée, creating the Biclir, which includes all the estate’s grape varieties: Sauvignon Blanc, Chenin Blanc, Cabernet Franc, Cabernet Sauvignon, Grolleau, and Gamay. Each variety was processed separately, mostly using flotation (clusters and/or berries soaked in press juice) and, for some, extended skin contact over several months. The wines were aged in fiberglass tanks and multiple-use oak barrels. The result is a vibrant, airy red wine bursting with energy, featuring tropical fruits, floral notes, and layers of deep, nuanced flavors. An absolutely remarkable wine.

Jérôme is part of a community that took shape organically in the early 2000s in the Loire Valley. A group of young, nature-driven, often first-generation winemakers devoted to natural wine. They work long days in the vineyards and cellars, living simply and supporting one another when needed. Ideas are shared freely, yet each ultimately follows his own independent path toward authentic, low-intervention winemaking.
