The Pinot Noir is macerated in whole bunches for 7 days, with a touch of Gamay, which comes from Jean-Marc's old friend Raphaël Beysang. It is aged in smaller barrels (350-500l) for 9 months, giving it a more intense character than its foudre-aged counterpart (Elios).
An amazing amount of red berry fruit, paired with nicely balanced acidity. Bottled without filtration, fining or sulfur addition.

Jean-Marc Dreyer is a fourth-generation biodynamic natural winemaker based in Alsace, in northern France.
