Chardonnay from a small village near Boudes, selected from Burgundian vines through massale selection. The soil is red sandstone, containing a very high amount of iron oxides, and is further enriched with granite rubble. The grapes were pressed in whole bunches and then the wine was aged for 9 months: half in new 500-liter oak barrels and half in two 228-liter multi-fill barrels. The oak does not dominate the wine at all, thanks in part to the precise selection of the wood. The oak used for the Burgundian Rousseau barrels comes from the Tronçais forests and, after long drying (36–48 months), received a very light toast.

Henri Chauvet

Born in 1987, Henri Chauvet lives and works in Boudes, in the Auvergne wine region of southern France. In 2020, he traded his suit for rubber boots, leaving behind a career in insurance to study viticulture and oenology.

During his apprenticeship in the Rhône Valley, he honed his craft under the guidance of Jérôme Bressy and the legendary Thierry Allemand of Cornas.
