Made from whole clusters, 100% Aligoté, biodynamically grown from 60-year-old vines on sandy-loam soils. After hand harvesting, the clusters are placed in vats for a few days, allowing fermentation to begin within the whole bunches through partial carbonic maceration. The cap is gently pressed daily before the fermenting juice is pressed into old Burgundy barrels (228-liter barriques), where it spends 9 months on fine lees. The wine is bottled unfiltered and unfined, with just 0.5 g of “homeopathic” natural sulfur from volcanic mines added a few months before bottling.

Pierre Clair’s story begins in the 1960s, when he first planted vines on his parents’ land near the village of Corpeau in the Côte d’Or, producing just enough for experiments and personal consumption. He and his wife, Jennifer, eventually took over his grandfather’s estate in 2006, working evenings and weekends alongside their jobs at other local wineries.
