100% Chardonnay from Yonne (AOC), with vines averaging around 40 years old. On the clay-limestone soils, the variety shows its finest expression. Directly pressed, fermented in concrete vats, then aged for 12 months in multi-use Burgundy barrels. Bottled unfiltered, unfined, and without added sulfur.

Born in Troyes, Nicolas first encountered the science of winemaking at a school in Belleville (Beaujolais) in 1989. After completing his studies, he completed an internship in Washington State, where he learned how to produce wine on an industrial scale.
