The bush vines, thanks to the sandy soils characteristic of this region, survived the phylloxera epidemic and remain rooted in the ground on their own original roots to this day. Beneath the 50 cm sandy topsoil lies a loess-rich subsoil, abundant in clay and limestone, which gives the grapes from these 140-year-old vines their distinctive mineral character. Combined with naturally low yields, this produces an exceptionally concentrated juice. The destemmed grapes ferment for two weeks in open vats, then the wine is aged for a year in old barrels.
