The year 22 was an exceptionally dry, drought-prone year, and the harvest took place at four well-chosen times, between September 9 and October 10. After the whole-bunch pressing, it ferments in amphorae of various types and sizes. It matures on the lees for 13 months, then is decanted into a tank before bottling in September 2023, from where it is bottled unfined, unfiltered, and without the addition of sulfur in November 2023.
